Made from sheep’s organic milk. After a short drying to make it harder, the ricotta is salted and matured for 100 days. During this time, it will grow a natural thin protective black film outside, from which it is name. The black skins comes from natural moulds, and protects the ricotta inside keeping it soft, rich and very delicate. Rich in flavours and soft, it is marvellous alone or with fresh vegetables.
